Hey, friends! I hope you had a fantastic weekend. Mine was full of cleaning and organizing. I suppose you could say that the “nesting” instinct has hit hard in the last few days. Why is it that when you are 7.5 months pregnant, exhausted, and beyond uncomfortable, you suddenly get the urge to clean, and organize, your entire house from top to bottom?! It has not been pretty, but I have been getting a lot done. So, I’ll take it.
On to the topic at hand…

Today, Susan from Crafting a Family is sharing a fantastic recipe for Shredded Adobe Chicken Tacos. The best part is, this dinner can be done in practically no time in your electric cooker. Susan uses this recipe as an easy dinner while on vacation with her family, which I think is a brilliant idea. We love taco night at my house, and I’m sure that my husband and daughter would love this adobe chicken. Susan gives a ton of tips in her post for how to tackle dinner on vacation when you’re with a large group. She’s also providing a packing list and ideas for how to save money on vacation.
